This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Parmentier recipes added to this site.

These recipes, all contain Parmentier as a major wild food ingredient.

Parmentier denotes the use of potatoes as a base, garnish or topping for a dish. This includes fried potatoes, mini roast potatoes and potato mash.

It was only in the middle of the 18th century, that a French royal agriculturalist, Antoine A. Parmentier popularised the potato in France. Indeed, he was the first to plant potatoes in the royal gardens. As a result, a number of French dishes that employ potatoes as a garnish or main ingredient have the descriptive term 'Parmentier'. The name also lends itself to a type of medium dice that is used to chop potatoes.
