Neats a word that describes any cattle of the genus Bos (includes mature and immature, so the steer, heifer and calf would all be called a neat). Typically used In the sense of a 'neat's tongue' or 'neat's foot' — that body part belonging to a cow, ox or calf. Used from medieval to late Georgian times, but died out in Victorian culinary usage.
