These recipes, all contain Lemon Thyme as a major wild food ingredient.

Lemon thyme is a hybrid thyme (Citrus Thyme; hybrid T. pulegioides × T. vulgaris) is also a popular culinary herb, with cultivars selected with flavours of various Citrus fruit of which lemon is the commonest.

Like common thyme it is a herbaceous perennial from the Lamiaceae (mint) family. It is an aromatic small shrub growing to 40cm tall and the leaves have a distinct lemon note. Chopped lemon thyme leaves, stripped from the stalk makes a wonderful accompaniment to fish, chicken and turkey dishes. In small quantities lemon thyme also works well with shellfish.

Mixed with chopped basil, garlic, oregano and rosemary it can give a wonderful and different Mediterranean-style rub for chicken or strongly-flavoured fish before grilling or barbecuing.
