Ile Flottante is a classic French dessert. The concept is fairly simple: a very light meringue floating on a bed of custard sauce. The meringue itself is made from egg whites, sugar, vanilla extract and usually cream of tartar, and cooked in a bain-marie. Other versions have caramnel, jam, fruit and fruit purée added to the classic recipe.
