Welcome to the summary page for FabulousFusionFood's Cook's Guide entry for Hoki along with all the Hoki containing recipes presented on this site, with 3 recipes in total.

This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Hoki recipes added to this site.

These recipes, all contain Hoki as a major wild food ingredient.



HokiMacruronus novaezelandiae (also known as Blue grenadier, blue hake, New Zealand whiptail, whiptail or whiptail hake) is a fish of the south Pacific, found around southern Australia and New Zealand at depths of between 10 and 1000m. The fish varies in length between 80 and 120cm and has white flesh. It is a Merlucciidae family and is a close relative of the hake. It belongs to the same order, the Gadiformes as cod and haddock.

The hake (blue grenadier) is the subject of a large commercial fishery industry in New Zealand. The flesh is firm and white and it makes a good substitute for cod and other white fish. It has recently appeared in supermarkets across the globe as frozen fillets which provide a more sustainable alternative to cod. But this, of course, has put pressure on stocks.
