A Granita is Italian sorbet made from sweetened syrup and which is often flavoured with coffee or liqueur. It’s made with a basic sorbet mixture that's stirred during freezing to give it a coarser more crystalline texture. As a result it thaws quickly and needs to be served as soon as it’s ready and is traditionally served either between courses or as a refreshment and to cleanse the pallet.
