This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Fumet recipes added to this site.

These recipes, all contain Fumet as a major wild food ingredient.

Fumet is the French for 'aroma' and refers to a concentrated stock that is added to sauces to enhance their flavour. Fish fumet is made with vegetables (leeks, onion, and celery), spices, water, wine, and fish bones (you can use fish heads, but you must remove the eyes). Another popular type of fumet is Mushroom fumet. This contrasts with meat, poultry and game stocks which are termed 'fonds'.
