à la Dauphinoise refers to a method of cooking where the object to be cooked is baked in a slow oven with cream and garlic. The classic Dauphinoise is gratin dauphinoise where thinly-sliced potatoes are cooked in a pan with cream, milk, garlic, butter (and often Gruyère cheese).
