As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Coulis recipes added to this site.

These recipes, all contain Coulis as a major wild food ingredient.

A coulis is a thick sauce made from puréed fruit (which can be cooked or raw). Frequently this is made with summer berries or tomatoes. It is puréed and typically passed through a fine-meshed sieve to ensure that it's free of pips and seeds.
