Ceviche is a classic South American dish made of raw white fish which is marinated in lemon or lime juice. The acid in the citrus juices break-down the fish and after a few hours it will eventually become opaque like ordinary cooked fish. It's typically served with sweet limes, raw onion rings, tomatoes and boiled sweetcorn.
