These recipes, all contain Bouchees as a major wild food ingredient.
Bouchés are small puff-pastry cases, similar to vol-au-vents in which are stuffed with fillings and baked. These make excellent canapés.
The name derives from the ease with which these can be popped into the mouth. Indeed, the term is derived as a diminutive of bonnes bouchés (literally, 'good for the mouth').
