Béarnaise sauce is one of the classic French sauces and is made from a reduction of vinegar, white wine, tarragon, black peppercorns and shallots. It's finished with egg yolks and butter.
The sauce is an excellent accompaniment to any plain meat (anything from steak to ham) and fish.
