This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Arborio Rice recipes added to this site.

These recipes, all contain Arborio Rice as a major wild food ingredient.

Arborio rice is the classic risotto rice, originating in the Piedmont region of northern Italy. It is a fat medium-grained rice that can absorb a lot of cooking liquid whilst still retaining a good 'bite' (ie doesn't become too soft) when fully cooked.

The rice itself is named after the town of Arborio, Italy (in the Po Valley) where it is grown. Arborio rice is a cultivar of the japonica subspecies of Oryza sativa (rice).
