Américane is a garnish of slices of lobster tail and truffles, which is typically for fish dishes, like the sea bass pictured here. But which, today, can also be used for beef dishes. In the picture shown here, braised sea bass is shown garnished with shavings of black truffle and rounds of poached lobster tail.
