This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the Al dente recipes added to this site.

These recipes, all contain Al dente as a major wild food ingredient.

Al dente is an Italian phrase literally meaning 'to the tooth'. It is used to describe the perfect texture of cooked pasta, which should be tender on the outside but with some resistance when bitten into. As each type of pasta has different cooking times only the tasting test will tell you that the pasta is perfectly cooked.

As well as pasta, the term is also sometimes applied to rice, particularly when making risotto.
