Sgoniau Caerffili (Caerphilly Scones)

Sgoniau Caerffili (Caerphilly Scones) is a traditional Welsh (Cymric) recipe for classic dough of flour, butter and milk with Caerphilly cheese, baking powder and sugar that are cut into rounds and baked until well risen and which are typically served warm with butter and jam for tea time. Dull:

Hidlwch y blawd a'r pwodwr codi i fowlen cyn ychwanegu'r menyn a'ir riwbio i fewn gyda'ch bysedd nes fod y gymysgfa yn debyg i friwsion bara. Gratiwch y caws i'r gymysgfa cyn ychwanegu'r siwgwr. Cymysgwch i gyfuno'r cyfan yna ychwanegwch y llefrith ychydig ar y tro nes fod y cymysgfa yn glynu fel toes meddal ond cadarn. Trosglywddwch i wyneb blawdiog cyn rholio'r gynysgfa allan nes tuw 4mm o drwch. Defnyddiwch torrwr pastei tua 6cm o ddiamedr i dori'r does cyn trosglwyddo'r sgoniau i hambwrdd pobi wedi ei iro'n dda. Brwsiwch bennau'r sgoniau gyda'r llefrith cyn rhoi'r cyfan mewn popty wedi ei gyn-gynhesu i 200°C (400°F/Gas Mark 6) a choginio am tua 10 munud, neu nes fod y sgoniau wedi codi ac yn euraidd am eu pennau. Gadewch iddynt oeri cyn eu gweini yn gynnes gyda menyn a jam cartref.

English Translation


Ingredients:

240g self-raising flour
1/2 tsp baking powder
45g butter
45g caster sugar
60g Caerphilly cheese
150ml milk
pinch of salt

Method:

Sift the flour, salt and baking powder together into a bowl. Add the butter and rub in with your fingers until the mixture resembles fine breadcrumbs. Grate the cheese into the mixture and add the sugar. Mix to combine then add the milk a little at a time until the mixture comes together as a soft, firm, dough.

Turn onto a floured work surface and roll out to about 4cm thick. Cut into rounds about 6cm in diameter with a pastry cutter and transfer to a greased baking tray. Brush the tops with warm milk then place in an oven pre-heated to 200°C (180°C fan/400°F) and bake for about 10 minutes, or until well risen and golden brown on top.

Allow to cool on a wire rack and serve warm with butter and jam.
