Ingredients:
60ml orange juice
120g sugar
30ml lemon juice
250ml boiling water
120ml Madeira wine
2 egg whites
Method:
First mix together the Madeira, orange juice and lemon juice. Place this in the freezer and freeze until semi-solid (about half-way to a sorbet in consistency). Once the mixture has frozen sufficiently take out of the freezer and set aside.
Now beat the egg whites until just white and full of air bubbles. Place this bowl in a larger bowl of iced water and boil a kettle. Pour the boiling water over the sugar to make a syrup and once the sugar has dissolved, carefully pour this over the egg whites. Keep on adding syrup and beating until all the syrup is incorporated and the mixture has reached room temperature. Add this to the Madeira and citrus juice mixture, mix well and serve immediately over a hot boiled pudding (such as pwdin Eryri) and this should be served immediately.
