This is a great way of using-up your Christmas or Thanksgiving turkey leftovers by currying the meat and then serving wrapped in rotis.
Ingredients:
600g cooked turkey, cut into bite-sized pieces
1 tablespoons vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
1 1/2 tbsp curry powder
1 tsp garam masala
1 tsp paprika
1/2 habanero chilli, minced (optional)
250ml water
salt and freshly-ground black pepper, to taste Nevis rotis, for wrapping
oil for frying
Method:
Place a wok or deep-sided frying pan over medium heat. Add a generous splash of oil and use to fry the onion and garlic until tender (about 5 minutes).
Scatter over the curry powder, stir to combine and continue stirring for 2 minutes until the spices are aromatic. Now add the turkey pieces, salt, black pepper, chilli pieces, chilli powder and paprika. Continue stir-frying over medium heat for 10-15 minutes.
Now add the 250ml of water, bring to a boil, reduce to a simmer and continue cooking, covered, for about 20 minutes or until turkey is tender.
