Ingredients:

4 tbsp olive oil
24 scallops
32 prawns
1 tilapia, cleaned and cut into chunks (optional)
2 lobster tails, halved
90g fresh oregano, shredded
4 king prawns (or jumbo prawns)
240g plum tomatoes, sliced
3 tbsp fresh parsley, chopped
1/4 tsp chilli powder
600ml fish stock

Method:

Heat the oil in a pan and use to cook the seafood and fish (if using) for 2 minutes then add the plum tomato and the herbs. Fry for 1 minute more then add the fish stock. Bring to a simmer and cook for about 6 minutes.

Divide the seafood evenly between four warmed sup bowls and ladle the stock on top. Sprinkle with a little chilli powder and serve.
