Zanzibar Kashata

Zanzibar Kashata is a traditional Tanzanian recipe (originating on the Island of Zanzibar) for a classic snack of peanuts and grated coconut mixed with melted sugar that's cooked to a candy then cooled and cut before serving. Ingredients:

400g sugar
Peanuts or grated fresh coconut (either use 400g fresh or moist coconut [or the equivalent desiccated coconut moistened with 4 tbsp milk] or 400g shelled and skinned peanuts briefly heated in a lightly-oiled pan, or a half-and-half mix of coconut and peanuts)
1/2 tsp ground cinnamon (or cardamom)
pinch of salt
100g wheat flour (optional)

Method:

Heat the sugar in a hot pan until it melts and just begins to brown. Reduce the heat and quickly add all the remaining ingredients, stirring to combine each time a new ingredient is added. When everything is in the pan, continue stirring for about a minute to ensure everything is completely combined.

Immediately transfer the mixture onto a well-greased baking tray or baking sheet. Allow to cool then cut into squares or diamond shapes whilst still warm. Allow to cool completely then cut the shapes out and serve.
