Crocodile Curry

Crocodile is an interesting white meat, much more tender when cooked than you would imagine. It’s not particularly strongly flavoured and I think it’s best when smoked. This recipe comes from Zambia, where crocodile is fairly widely available.
Ingredients:
1kg (2 1/3 lbs) crocodile tail
3 garlic cloves, peeled
1 small onion, coarsely chopped
15cm (6 in) piece of ginger, peeled and chopped
1 tsp ground turmeric
1tsp cumin seeds
500ml (2 cups) chicken stock
125ml (1/2 cup) coconut milk
1 tbsp tomato puree
1-2 tsp (heaped)
red curry paste
salt and freshly-ground black pepper, to taste
Coriander (cilantro) leaves, to garnish
1 tbsp olive oil
Method:
Fillet the crocodile tail, removing the excess fat, then cut into bite-sized chunks.
Place a pan over high heat. When hot add 1 tsp olive oil and use to fry the ginger and coven for 3-4 minutes, until softened. Add the turmeric and cumin seeds and fry for 1 minute more.
Stir in the chicken stock, bring to a simmer and cook for 4 minutes over medium-high heat. The liquid should have reduced by ¼ by this time.
Strain the liquid and discard the onion, garlic and ginger solids. Return the liquid to the pan and stir in the tomato puree, curry paste and coconut milk. Bring the ingredients to a boil over high heat and cook for 2 minutes. Take off the heat and set aside.
In another pan, add 2 tsp olive oil and use to fry the crocodile pieces for 10 minutes, turning frequently until the meat is slightly browned. Transfer the crocodile meat into the sauce and put the pan back over high heat. Mix and cook 2 minutes then season with salt and black pepper before serving.
Accompany with basmati rice.
