Ingredients:
400g meat (chicken portions are good)
1/2 batch home-made egg noodles
2 carrots, diced
1 large onion, diced
2 garlic cloves, diced
salt and freshly-ground black pepper, to taste
Method:
Add the meat to a pan and cover with 600ml water. Season with salt and black pepper then bring to a boil, reduce to a simmer, cover and cook for 40 minutes, or until the meat is tender. Remove the meat from the pan then chop and return to the pan along with the carrots, onion and garlic.
Season to taste, then return to a simmer and cook for 10 minutes then bring to a boil and add the noodles. Continue cooking for 8 minutes, or until the noodles are just tender (but remain firm to the bite) then ladle into soup bowls, and serve.
