Zahtar-spiced Barbecued Goat

This is a classic and simple Jordanian method for generating spiced lamb for the barbecue or grill.
Ingredients:
800g goat meat from the leg, cut into strips
juice of 1 limes
salt, to taste
150ml olive oil
6 tbsp vinegar
2 tbsp
Zahtar spice
Method:
Prepare the goat meat then place in a non-reactive bowl. Sprinkle the lime juice over the top then toss to combine. Cover the bowl and set aside for at least 30 minutes. After this time wash the goat meat with plenty of water (this removes any lanolin on the meat and improves the flavour).
Pat the meat dry then whisk together the olive oil, the vinegar and the zahtar spice blend. Pour over the meat, toss to combine then set aside, covered, in the refrigerator to marinate for at least 2 hours.
After this time remove the goat meat from the marinade (but reserve this) then place on your pre-heated barbecue (or under a grill [broiler]). Cook for about 15 minutes, turning frequently (or until done) and baste frequently with the reserved marinade as you cook.
