This is a very simple dip from Zimbabwe that is typically served with fish cakes and barbecued fish. With its use of mango chutney and yoghurt it comes from the Indian influence on the cuisine of the country.
Ingredients:
250ml plain yoghurt
200g
mango chutney
juice of 1 small lime
Method:
Chop the mango chutney to break up and large pieces. Turn into a bowl and mash lightly then work in the yoghurt, followed by the lime juice.
Stir well to combine then cover with clingfilm (plastic wrap) then set in the refrigerator to chill for at least 60 minutes before serving.
This can be made the day before and the flavour is improved if allowed to chill in the refrigerator over night.
Serve chilled to accompany fish-based dishes.
