Yesil Marcimek Çorbası (Green Lentil Soup) is a traditional Turkish recipe for a soup of green lentils with onion in a cumin stock. The full recipe is presented here and I hope you enjoy this classic Turkish version of: Green Lentil Soup.

Ingredients:
350g dried green lentils, soaked over night (do not boil)
1 medium onion, finely chopped
2 tbsp butter
2 tbsp flour
600ml hot water
1 tsp ground cumin
1 tsp salt
black pepper, to taste
To Granish:
1 garlic clove raspberry vinegar, or other flavoured vinegar
Method:
Melt the butter in a pan and use to fry the onion over medium heat for about 5 minutes, or until just tender. Add the flour, stir into the butter and cook, stirring continually, for a further 2 minutes. Slowly add the hot water, stirring all the while so that you end up with a smooth mixture. Now add the soaked and drained lentils and season with the salt, cumin and black pepper.
Bring to a simmer and cook on medium heat for about 25 to 30 minutes, or until the lentils are tender, stirring occasionally. Adjust the seasonings (and add more water if necessary) then ladle the soup into warmed soup bowls. Whisk together the garlic and vinegar (about 6 tbsp) and add 1 tbsp of this mixture to garnish each soup bowl.
