This is a yellow-coloured brittle toffee from county Antrim in Northern Ireland that was traditionally sold during the Lammas harvest fairs. Lammas day is the 1st of August and traditionally these were the first of the harvest fairs.

Ingredients:

30g butter
240g brown sugar
500g golden syrup (light corn syrup)
1 dessertspoon water
1 tsp vinegar
1 tsp bicarbonate of soda

Method:

Melt the butter in a heavy-based saucepan then add the sugar, syrup, water and vinegar. Stir until the ingredients have melted then bring to a boil and continue cooking to the 'hard crack' stage (143°C [290°F] as measured on a confectioner's thermometer). You can also test for the hard crack stage by dropping a little of the sugar mixture into a bowl of cold water. Leave for a few seconds then pick this up between your finger and thumb. When the finger and thumb are separated, the thread formed between then should break sharply.

At this point, stir in the bicarbonate of soda (the mixture will foam up). Immediately pour onto a chilled, greased, heatproof slab (marble or granite is ideal), turning the edges with a greased palette knife. Continue turning the mixture until cool enough to handle then pull with buttered hands until pale in colour.

Set aside to harden completely then break into rough pieces and store in a jar in a cool place.
