These classic lollipops blend wisteria syrup and flowers, linden flower syrup and white wine to create a summer favourite. These adult popsicles are a magical end to an early summer meal. White wine and lime are a divine pairing for wisteria and linden syrups.
Method:
Combine the white wine, wisteria syrup, linden cordial and lime juice in a large jug. Taste the mixture — it should be sweet with a balance of tartness. If your white wine is on the drier side, add a touch more syrup. If you are using flowers, drop a few wisteria blossoms into your lolly moulds.
Fill the moulds by a quarter and transfer to the freezer for a couple of hours (keep the remainder of the wine and syrup mixture in the refrigerator). Add some more flowers, and some more liquid. Return to the freezer for another hour, or until the new layer has frozen.
Remove again and add the lollipop sticks (if you are using wooden sticks), some more flowers, and the remainder of the wine and syrup mixture.
When they are frozen solid release the popsicles by dipping the mould into warm water for a couple of seconds.
