Ingredients:

400g cooked mashed potatoes
200g willowherb leaves and young shoots, lightly steamed
1 tin corned beef or spam, cubed
butter or oil for frying
salt and black pepper to season

Method


Rosebay willowherb makes an excellent alternative to cabbage or kale in this very traditional recipe. Cook and mash the potatoes with a little butter, add shredded and cooked willowherb, season and mix to combine.

Heat oil or butter in a pan and add the potato mixture. Spread out and top with the chopped meat. Stir to combine then spread the diced meat over the top. Stir to combine, flatten the mixture down then cook gently until the bottom is golden brown and crispy. Turn the mixture over the best you can then cook on this side until browned. Serve with ketchup, brown sauce and/or chilli sauce.
