Wild Violet Flower Lemonade

I always enjoy making this as the violet extract starts out blue but magically turns pink as you blend in add the acid lemon juice.
Ingredients:
For the violet infusion:
500ml (2 cups) freshly-picked wild violet flowers, gently rinsed
water
For the lemonade:
1l water
250ml (1 cup) freshly squeezed lemon juice
2 tbsp sugar (or to taste)
Method:
Put the freshly-picked violet flowers (remove and discard any stems or leaves) into a steel saucepan. Add 375ml (1 1/2 cups) water then bring to a simmer and cook for a few minutes until the water has turned a vivid blue. Turn into a fine-meshed sieve and allow the infusion to drain into a bowl. Discard the flowers. Set the mixture aside to cool.
Mix the lemon juice with the sugar and stir until dissolved. Mix with the 1l water then taste and adjust the sweetness to your liking. Add half the violet infusion to the lemon juice water and watch in amazement as the liquid turns from blue to pink. Taste and add more violet infusion if you like (or you can chill the violet infusion in the refrigerator for a second batch).
Put the lemonade in the refrigerator and chill. Serve over ice.
