Wild Plum Pie

Ingredients:

Enough Shortcrust pastry (pie dough) for a double crust on a 22cm pie dish
1 tbsp arrowroot mixed in 1 tbsp water
180g sugar
1/4 tsp salt
1/4 tsp ground cinnamon
600g pitted wild plums
1 tbsp butter, cut into small pieces

Method


Roll out the pastry and use a little over half to line a pie plate. Meanwhile combine all the other ingredients together and use to fill the pie dish. Dot with butter then roll-out the remaining pastry and use to cover the pie and the fruit mixture.

Use a fork to crimp the edges together then trim the pastry. Use a fork to make several pricks in the top of the pie, dust with a little sugar then place in an oven pre-heated to 190°C and bake for 45 minutes, or until the filling is bubbly and the crust has browned.
