Ingredients:

450g wild mustard greens (or kale, collards, turnip greens etc)
225g sliced onions
125g sliced carrots
125g sliced celery
1 tbsp olive oil
1 tbsp garlic, minced
225g Kielbasa (or other smoked) sausage
250ml dry white wine
2l chicken stock or broth
900g cooked cannelloni beans (tinned is fine)

Method:

Wash the greens, remove and discard and stems and shred the greens. Add the oil to a large pan along with the onions, celery, garlic, thyme and sausage. Stirring frequently, keep cooking until the sausage is well browned (about 10 minutes).

Add the wine, stock, beans and greens. Stir to combine, bring to a boil then reduce to a simmer, cover and continue cooking until the beans are heated through and the greens are tender (about 20 minutes). Season to taste and serve in soup bowls.
