Wild Mushroom Pizza

Ingredients:

enough pizza dough for a 25cm diameter pizza
2 tsp olive oil
100g mushrooms (any of: ink cap, morel, field mushroom, horse mushrooms and/or porcini)
4 tbsp olive oil, for frying
2 garlic cloves, very finely chopped
2 shallots, very finely chopped
salt and freshly-ground black pepper, to taste
2 tbsp parsley, finely chopped
leaves from 2 sprigs of basil, shredded
6 tbsp Parmesan cheese, finely grated
100g Mozzarella cheese, grated

Method:

Prepare the pizza dough according to the recipe then drizzle over 2 tsp olive oil to moisten. Wipe and clean the mushrooms then slice.

Heat the 4 tbsp olive oil in a frying pan. Add the garlic and shallots and fry for 2 minutes then stir in the mushrooms and fry gently for about 6 minutes, or until golden. Season to taste with slat and black pepper.

Arrange the mushroom mix on top of the pizza base then scatter over the chopped parsley and shredded basil. Finally scatter the Parmesan cheese and Mozzarella cheese evenly over everything.

Set on a hot baking tray or pizza stone then transfer to an oven pre-heated to 180°C and bake for about 15 minutes, or until the crust is nicely browned.

Serve warm, sliced into wedges.
