White Bakewell Fudge

This recipe is for a Christmas white chocolate confection containing cherries and almonds (hence the reference to Bakewell Tart).

Ingredients:

425g white chocolate
400g tin of sweetened condensed milk
1 1/4 tsp almond extract
75g glacé cherries, cut into eight pieces each
whole glacé cherries, to garnish
50g slivered almonds

Method:

Chop the white chocolate and combine in the top of a bain-marie (double boiler) set over simmering water. Heat, stirring constantly, until the chocolate has melted and combined with the condensed milk.

Stir in the almond extract, chopped cherries and slivered almonds and take off the heat.

Line a loaf tin with clingfilm (plastic wrap) and pour in the chocolate and cherry mix. Allow to cool slightly then gently press in whole glacé cherries to decorate (if desired). Allow to cool completely, cover and transfer to the refrigerator. Chill for at least 3 hours, or until completely set (best if left over night).

The following day, turn the cooled fudge from the tin, cut into squares and keep in the refrigerator (note that this is a soft fudge and is best served slightly chilled).

This is an excellent Christmas fudge and makes a wonderful addition to a gift basket.
