This is a classic version of Welsh Rarebit (cheese, beer and flour baked on toast) that's prepared on St Vincent island in the Caribbean.
Ingredients:
450g mature Cheddar cheese, grated
300ml beer
1 tbsp Worcestershire sauce
1/4 tsp cayenne pepper (or hot chilli powder)
1 tsp prepared mustard
1 tsp mustard powder
6 slices of toast, with the crusts trimmed off
paprika to garnish
Method:
Combine the beer, Worcestershire sauce, mustards and pepper (cayenne or chilli) in a bowl and set aside to stand for at least 30 minutes. After this time turn into a small pan and slowly bring to a boil over a low heat. Add the grated cheese a little at a time, allowing it to melt after each addition.
When all the cheese has melted into the beer pour the resultant mixture over the toasts. Sprinkle the top with paprika then place under a hot grill (broiler) and cook until the top is well browned and bubbling. Serve hot.
