This is a classic German preserve of diced pumpkin in a lightly-spiced vinegar and water base that's traditionally served as an accompaniment at Christmas.

Ingredients:

1kg pumpkin, diced (weighed after peeling and de-seeding)
600ml water
2 tbsp sugar
1 cinnamon stick
1/2 tsp green cardamom pods, lightly crushed
110ml white wine vinegar

Method:

Combine the water and spices in a pan, bring to a boil then add the pumpkin. Return to a boil, reduce to a simmer and cook for about 10 minutes, or until the pumpkin is cooked through but still crunchy.

Drain the pumpkin and pack into jars. In the meantime combine the sugar and vinegar in a pan. Bring to a simmer, stirring until the sugar has dissolved) then take off the heat and pour over the pumpkin in the jars, ensuring that all the pumpkin is covered. Seal with vinegar-proof lids then allow to cool. Store in a cool, dark, cupboard to mature for at least 3 weeks before using.
