Vitumba (Rice Cupcakes)

Vitumba (Rice Cupcakes) is a traditional Tanzanian recipe (originating on the Island of Zanzibar) for a classic yeast-leavened cupcake made with rice flour and coconut cream that's flavoured with cardamom and black pepper and which is deep fried. Ingredients:

450g ground rice
300g fine rice flour
400ml Coconut Cream
400m water
13g dry active yeast
4 heaped tbsp sugar
1 tsp salt
pinch of ground cardamom
pinch of freshly-ground black pepper
oil for deep frying

Method:

Soak the ground rice flour in water for 3 hours to soften then grain. Mix the yeast with the sugar and the salt. Heat the coconut milk to about 60°C (no higher or you will kill the yeast) then add all the ingredients and mix thoroughly by hand until you have a dough. Knead this dough as best you can, then cover and allow to rise in a warm spot for 3 hours.

At this point, knock the dough back and shape medium-sized balls. Place on a baking sheet, cover and allow to raise for about 40 minutes.

Meanwhile heat oil in a deep fryer or a wok. Add the little vitumba balls a few at a time and fry until golden all over.
