Ingredients:

1 batch (550g) devil's food cake mix (or 1 box shop-bought)
250ml water
3 eggs
80ml corn oil
80ml sour cream
2 tsp vanilla extract
1/2 tsp salt
150g dark chocolate chips

For the Icing:
300g dark chocolate chips
400g granulated sugar
160ml milk
200g unsalted butter, diced
1/4 tsp salt
1 tsp vanilla extract

Method:

In a large bowl, combine the cake mix, water, eggs, oil, sour cream, vanilla and salt. Beat until thoroughly blended then stir in the chocolate chips, mixing thoroughly to combine. Divide the batter between 3 non-stick sandwich pans (20cm diameter) that have been well buttered. Transfer to an oven pre-heated to 170°C and bake for 25 minutes, or until a skewer inserted into the centre of the cake emerges cleanly.

Remove from the oven and allow to cool in the pans for 10 minutes before turning out onto a wire rack to cool completely. As the cakes are cooling combine the sugar, milk, butter and salt for the icing in a saucepan. Bring the mixture to a boil and continue boiling vigourously, stirring occasionally for exactly 1 minute. Add the chocolate chips to a bowl and pour the hot milk mixture over the top. Beat on medium sped with an electric mixer for about 10 minutes. Use the mixture to sandwich the 3 cake layers together and to cover the top and sides of the cake.
