Vegetable-brined Turkey

Ingredients:

4l water
225g salt
225g dark Muscovado sugar
1 onion, halved
3 carrots, chopped
200g potato peelings
1 tsp ground allspice
1/2 star anise
generous twist of freshly-ground black pepper
60g dried mushrooms

1 frozen turkey (about 7kg)

Method:

Combine all the ingredients for the brine stock in a large pan, bring to a simmer and cook, covered, for at least 90 minutes. Take off the heat, strain then set aside to cool.

Add the frozen turkey to a large container then add the cooled stock, topping up with just enough water to cover the bird (if needed). Set aside in a cool place to marinate for 24 hours. After this time drain off the stock mixture then cover the bird with cold water and set aside for 10 minutes. Again drain the bird then transfer to a roasting tin (no need to dry the turkey). Now roast the bird using the traditional roast turkey recipe.
