Virgin Island Roti

A roti is a flatbread from south Asia that's also a commonly found in Caribbean cuisine. Except that in the Caribbean it's more commonly seen as a tortilla, a wrap around other food, most notably curries. So, to be authentic you should prepare these simple rotis and serve them with a curry filling. They can also be used with seafood.

Ingredients:

165g plain (All Purpose) flour
1/8 tsp Salt
3 1/2 tbsp Softened Butter (not melted)
Water

Method:

Sift together the flour and salt in a bowl.

Mix in softened butter and while mixing, slowly add in a small amounts of water at a time until dough becomes soft and pliable.

Sprinkle your work surface with flour and knead the dough on this until smooth.

Divide the dough into 5 pieces. Roll each piece into a thin, round shape.

Heat a pan with a small amount of oil. Place one roti in the pan and cook until it begins to brown. Flip the roti and brown on the other side. Repeat with the remainder of the rotis.
