Ugandan Ugali

Ugali is made throughout East Africa, this version is from Uganda and, unusually, contains milk in the mix.

Ingredients:

250ml water
1 tsp salt
250ml milk
150g white cornmeal

Method:

Combine the water and salt in a saucepan and bring to a boil. In a separate pan combine the milk and cornmeal. Heat gently, stirring constantly, until the mixture is smooth. Take off the heat then very slowly pour the cornmeal mixture in a steady stream into the boiling, salted, water.

Continue cooking, stirring constantly, for a few minutes or until the mixture begins to thicken. Reduce the heat to low and continue cooking the ugali for about 15 minutes, stirring every few minutes.

You need to continue cooking the ugali is very stiff and begins to pull away from the sides of the saucepan. Serve hot.

Note that ugali is different from that other Ugandan staple, Posho which is made from more finely ground maize flour.
