Tvarahovy Kolác Treny (Czech Cheesecake)

Tvarahovy Kolác Treny (Czech Cheesecake) is a traditional Czech recipe for a classic cottage cheese cheesecake made on a sweet yeast crust which is oven baked and finished with a meringue topping. Ingredients:

1 sweet yeast crust

For the Topping:
400g cottage cheese
200g granulated sugar
1 tbsp cornflour (cornstarch)
1 tbsp dark rum
50g raisins
40g butter
2 large eggs, separated
3 tbsp milk or double cream
1/2 tsp freshly-grated lemon zest

Method:

Prepare the base as for the sweet yeast crust recipe.

Press the cottage through a fine-meshed sieve and drain. Meanwhile, cream together the butter and sugar in a bowl until pale and fluffy. Add the egg yolks one at a time, mixing thoroughly after each addition. Beat the mixture until foamy then beat in the cornflour, milk, rum, cottage cheese, lemon zest and raisins.

In a clean and dry bowl beat the egg whites until they form soft peaks then gently fold into the cheese mixture. Pour the resultant cheesecake mix over the prepared crust then transfer to an oven pre-heated to 180°C and bake for 50 minutes, or until the edges of the cheesecake are a light golden brown.

Set aside to cool and serve with cream at room temperature.
