Ingredients:
1 chicken breast, diced
375g fresh okra, ends trimmed
2 tbsp cooked chickpeas
10 cherry tomatoes, halved
25ml extra virgin olive oil
120ml hot water
1 tsp salt
25ml extra virgin olive oil
For the Dressing:
juice of 1 lemon
1 garlic clove, grated
1 tsp dried mint, chopped
Method:
Bring a pan of lightly-salted water to a boil, add the chicken and cook for about 25 minutes, or until tender. Drain the chicken and when cool enough to be handled cut into small dice.
Add the chicken to a pan and add all the remaining ingredients (except for the final 25ml olive oil). Bring to a boil, reduce to a simmer then cover and cook for about 25 minutes, or until the okra is tender. Add the remaining olive oil then take off the heat.
Pour the mixture into a warmed serving bowl then whisk together the dressing ingredients and pour over the top of the stew. Serve immediately.
