Turnip Puff

Turnip Puff is a traditional American recipe for a light accompaniment that is half way between a puree and a cake and which makes an interesting alternative side dish for Thanksgiving, Christmas or even Burns Night. Here is an American recipe that makes a very interesting alternative to the traditional Turnip mash for Thanksgiving, Christmas or even Burns Night.

Ingredients:

750g turnips, peeled and cubed
2 tbsp butter
2 eggs, beaten
3 tbsp plain flour
1 tbsp brown sugar
1 tsp baking powder
pinch of freshly-grated nutmeg
50g fine breadcrumbs
2 tbsp butter, melted
salt and freshly-ground black pepper, to taste

Method:

Bring a pan of salted water to a boil, add the turnip pieces and cook for about 20 minutes, or until tender. Drain and mash with a fork or potato masher.

Work in the butter and eggs, beating thoroughly to combine.

In a separate bowl, combine the flour, sugar, baking powder, spices and seasonings. Stir this into the turnip mixture.

Turn the resultant mash into a well-buttered baking or casserole dish. Mix the breadcrumbs with the melted butter and scatter over the top.

Transfer to an oven pre-heated to 180°C (375°F) and bake for about 25 minutes, or until the dish is piping hot and lightly golden brown on top.

Serve hot as an accompaniment.
