This is a classic British recipe for a barbecue dish of turkey steaks filled with cheese, leek and mustard that are rolled, cooked on a barbecue and served with a redcurrant relish.
Ingredients:
2 tbsp sunflower oil
4 tbsp fresh marjoram, chopped
4 turkey breast steaks
4 tbsp Dijon mustard (or any other mild mustard)
175g Emmenthal cheese, grated
1 leek, thinly sliced
salt and freshly-ground black pepper, to taste
For the Relish:
115g redcurrants
2 tbsp fresh mint, chopped
2 tsp clear honey
1 tsp red wine vinegar
Method:
For the relish, combine all the ingredients in a bowl and mash thoroughly with a fork to combine. Season to taste with salt and black pepper then cover with clingfilm (plastic wrap) and set aside to chill in the refrigerator.
For the turkey rolls, pour the oil into a small bowl, season liberally with black pepper then stir in 2 tbsp of the marjoram. Set aside.
Set the turkey steaks between two sheets of clingfilm (plastic wrap) and beat with a meat mallet or rolling pin to flatten. Season with salt and black pepper and spread the mustard evenly over the top surface.
Divide the Emmenthal cheese, leeks and the remaining marjoram between the turkey steaks. Roll the steaks up along the longest side then ties securely with kitchen twine to form a parcel.
Brush the turkey rolls with the marjoram oil then place on a barbecue over medium-hot coals and cook, turning frequently and basting with the marjoram oil for about 30 minutes, or until cooked through.
Serve immediately, accompanied by the relish.
