Turkey Curry with Yams is a modern Fusion recipe for a classic dish of curried turkey with bananas and yams that is an excellent way of getting rid of left-over turkey after the Christmas or Thanksgiving dinner. Ingredients:
900g cooked turkey meat, cut into strips
2 large onions, chopped
1 tbsp garlic, minced
1 tbsp ginger, freshly grated
2 heaped tbsp ./search.php?cat=1&ingredient=curry+powder&t=1">curry powder
2 bay leaves
1l chicken stock
1 large yam, peeled and chopped (about 800g)
salt and black pepper, to taste
Method:
Add a little oil to a large pan then use to cook the onions, garlic and ginger until nicely caramelized (about 12 minutes) then add the ./search.php?cat=1&ingredient=curry+powder&t=1">curry powder.
Stir to combine then fry for 2 minutes. Add the turkey meat to the pan then add the bay leaves, yams and chicken stock. Adjust the seasoning then bring the mixture to a boil, reduce to a simmer, cover and cook slowly for about 2 hours.
