Tulumba Taslisi (Tulumba Dessert)

Ingredients


For the Dough:
400ml water
3 tbsp unsalted butter
1/2 tsp salt
210g plain flour
3 eggs

500ml sunflower oil

For the Syrup:
1.25kg sugar
1l water
1 tsp lemon juice

Method:

Combine all the ingredients for the syrup in a large pan. Heat gently until the sugar dissolves, bring to a boil then take off the heat. When cooled to room temperature, divide equally between two bowls.

For the dough, combine the water, butter and salt in a pan. Heat, and as it begins boiling, reduce the temperature to a simmer and beat in the flour, a little at a time, until smooth. Continue cooking, stirring constantly, until the dough thickens and begins to leave the sides of the pot. Take off the heat and set aside to cool for a few minutes.

Now work in the eggs, one at a time, beating thoroughly to combine after each addition. Add deep oil to a coking pot or a deep fryer over medium heat. Spoon the dough into a piping bag fitted with a wide star nozzle and pipe out pieces about 4cm long. When the oil is hot, add the pastries, and fry until an uniform golden brown. When done, remove with a slotted spoon and drain on kitchen paper.

Keep frying until all the pastries have been cooked. When done, divide the prepared tulumba between the two bowls of syrup. Leave the pastries to soak in the syrup for 25 minutes, stirring occasionally and ensuring that they are all submerged in syrup.

When soaked sufficiently, remove the tulumba from the syrup with a slotted spoon then pile on a large serving plate, dust with a little icing sugar and serve immediately (if you wait too long before serving, they will no longer be crisp).
