Trey Kho Manor (Caramelized Fish with Pineapple) a Classic Cambodian recipe for a dish of fish and pineapple cooked in a caramel sauce that's served garnished with spring onions and ground black pepper.

Ingredients:

For the Tirk Kmao (Caramel Sauce):
1 tbsp sugar
1 tbsp water

For the Fish:
500ml water
1 whole snakehead or catfish (about 675g) cleaned and cut into steaks 12mm thick (or use trout)
1/2 pineapple, peeled and sliced
2 tbsp fish sauce
1 tbsp sugar
1 tsp salt
2 garlic cloves, minced
1/4 tsp freshly-ground black pepper
3 spring onions, chopped

Method:

Combine the sugar and 1 tbsp water in a small saucepan. Cook, stirring constantly, until the sugar turns dark brown (but be sure it does not burn).

Immediately work in the 500ml water then add the fish steaks, pineapple, fish sauce, sugar, salt and garlic. Bring to a simmer and cook until the fish is tender and the sauce has thickened (about 20 minutes).

Turn into a dish, garnish with the black pepper and spring onions. Serve immediately, accompanied by rice.
