Ingredients:

240g self-raising flour
120g margarine
1/4 tsp salt
120g butter
2 eggs
270g mixed dried fruit
grated zest of 1 orange
grated zest of 1 lemon
75ml milk

Method:

Beat the margarine until soft then add the sugar and cream into the fat until light and fluffy. Sift together the flour and salt into a bowl. Add the eggs one at a time, with a little of the flour into the margarine mix, beating well after each addition. Now add the fruit, citrus zest and the remainder of the flour. Mix in well then add the milk and beat to a smooth batter.

Turn into a 1kg loaf tin and place in an oven pre-heated to 180°C and bake for about 90 minutes, or until the top of the cake is golden and a skewer inserted into the centre of the cake emerges cleanly. Allow to cool in the tin for 5 minutes then turn onto a wire rack to cool completely.
