This melt-in-your-mouth cornbread recipe has a hint of sweetness. It's the classic accompaniment to soups and particularly for chili recipes (particularly Texas-style chilis).
Ingredients:
150g yellow cornmeal
125g plain (all-purpose) flour
100g sugar
4 tsp baking powder
1 tsp salt
250ml milk
2 large eggs
115g unsalted butter, melted and cooled
Method:
Pre-heat your oven to 190°C. Lightly grease a 20 x 25cm baking dish.
In a large mixing bowl combine the cornmeal, flour, sugar, baking powder, and salt, whisking to mix.
Form a well in the centre of the mixture then pour in the milk, crack in the eggs and add the butter. Stir until just combined, then pour the batter into the prepared baking dish.
Place in the centre of your pre-heated oven and bake for 20-24 minutes, or until a toothpick inserted in the centre comes of the cornbread emerges cleanly.
Remove from the oven and cool in the tin for 10 minutes. Cut into squares, remove from the tin and cool further. Serve warm.
