Touo du Niger (Nigerienne Touo): A Nigerienne recipe for a classic vegetarian dish of a tomato and okra stew served with maize porridge.
Ingredients:
4 onions, finely chopped
2 red bell peppers, finely chopped
4 tomatoes, finely chopped
500g okra, sliced into rings
juice of 1 lime
250g maize meal
60ml red palm oil
salt and freshly-ground black pepper, to taste
Method:
Heat the red palm oil in a pan. When hot, add the onions, bell peppers and tomatoes and fry over high heat for 15 minutes. At this point add the okra and the lime juice.
Season to taste with salt and black pepper and continue cooking for 15 minutes more.
Pour 500ml water into a pan. Season with salt then stir in the maize meal. Bring the mixture to a simmer, stirring constantly, adding water as needed, our until the maize porridge is thick and coming away from the sides of the pan.
Turn the maize porridge into a bowl and allow to cool until it can be handled comfortably.
Serve the maize porridge, accompanied by the okra stew. To eat, take pieces of the maize porridge, flatten in your hand and use to scoop up the maize porridge.
